Remembering the flavours of his childhood in Country Cork, Chef Peter Gowen brings the magic of traditional Irish recipes to the London Irish Centre.

Combining fresh produce and classic dishes with Peter’s fine dining techniques brings a delicious choice of culinary delights to the new look venue.

No tins, no frozen food, no microwave.

Peter’s day starts with making all the fresh bread for the sandwiches and meals served in the Hub that day including Ciabatta, Irish Soda Bread and Focaccia. All sauces and stocks are also handmade from the tomato sauce to the garlic mayonnaise for the hand cut chips.

Peter’s love of food began at home in Ireland seeing all the fresh food his mother used every day delivered from the local farm. His mother encouraged him to understand the depth of flavour available in the simplest dishes. This passion for food leads Peter into the hospitality industry and to London where he has learnt his craft in the most exclusive kitchens from the Chelsea Barracks to Fulham Football Club and is now delighted to make The London Irish Centre his creative kitchen.

As a celiac Peter is highly aware of the need for specialised dietary requirements and this brings diversity to his dishes. His understanding of food and his passion for all things fresh ensures that everyone is catered for and that London has a taste of Ireland in Camden.

A Hub favourite- Peter’s Irish Stew

Slow roasted shoulder of lamb Irish stew

Lamb is placed with garlic, rosemary, sage and thyme and roughly chopped vegetables, olive oil, salt and pepper and sealed in foil, then cooked for 5 hours at 110 degrees. The foil is taken off for the last hour and the stock is drained off. The onion, celery, leeks, carrots, white turnip and potatoes are cooked in the liquid with thyme. When the vegetables are cooked the meat is added and the flavours fuse together.

Finally served with fresh bread handmade that morning the meat falls off the bone.
